Esterházy Torta is one of Hungary’s most elegant traditional cakes. It features thin nutty sponge layers, a smooth vanilla buttercream, and a distinctive white fondant-style icing decorated with a classic chocolate pattern.
The combination of toasted nuts, creamy filling, and delicate cake makes this dessert a beautiful choice for celebrations and afternoon coffee.
Ingredients
For the Cake Layers
- 6 egg whites
- 150 g powdered sugar
- 150 g finely ground walnuts or hazelnuts
- 40 g all-purpose flour
- 1 teaspoon vanilla extract
- A pinch of salt
For the Vanilla Buttercream
- 500 ml milk
- 6 egg yolks
- 100 g granulated sugar
- 40 g cornstarch
- 1 teaspoon vanilla extract
- 250 g unsalted butter, softened
- 80 g powdered sugar
For the Topping
- 200 g white fondant or white icing
- 50 g dark chocolate
- 2 tablespoons heavy cream
For Decoration
- 100 g sliced almonds or chopped hazelnuts
Instructions
1. Prepare the Cake Layers
Preheat the oven to 180°C (350°F).
Whip the egg whites with the salt until foamy. Gradually add the powdered sugar and continue beating until firm, glossy peaks form.
Gently fold in the ground nuts, flour, and vanilla.
Divide the batter into 5–6 equal portions and spread each portion into a thin circle on parchment paper.
Bake each layer for approximately 8–10 minutes, until lightly golden.
Allow the layers to cool completely.
2. Make the Vanilla Filling
Whisk the egg yolks, sugar, cornstarch, and a little of the milk until smooth.
Heat the remaining milk with the vanilla. Gradually whisk the hot milk into the egg mixture.
Return the mixture to the saucepan and cook over medium-low heat, stirring constantly, until thick.
Transfer the custard to a bowl, cover the surface, and cool completely.
3. Prepare the Buttercream
Beat the softened butter with the powdered sugar until light and creamy.
Gradually add the cooled vanilla custard, beating until the buttercream becomes smooth.
4. Assemble the Cake
Place one cake layer on a serving plate.
Spread a thin, even layer of vanilla buttercream over it.
Continue layering cake and buttercream until all layers are used.
Cover the top and sides with a thin layer of the remaining buttercream.
Refrigerate for at least 2 hours.
5. Add the Classic Icing
Warm the white icing gently until spreadable.
Pour it over the chilled cake and smooth the surface quickly.
Melt the dark chocolate with the cream and transfer it to a small piping bag or paper cone.
Pipe several thin lines across the white icing.
Using a toothpick, gently drag through the chocolate lines in alternating directions to create the traditional Esterházy pattern.
6. Decorate and Chill
Press sliced almonds or chopped nuts around the sides of the cake.
Refrigerate for several hours, preferably overnight, before slicing.

- Bake the cake layers separately for even thickness.
- Make sure the custard is completely cool before combining it with the butter.
- Chill the assembled cake before adding the icing.
- Work quickly when spreading the white icing because it sets as it cools.
- Use a sharp knife warmed in hot water for cleaner slices.
