👩🍳 How to Make Traditional Hungarian Dobos Torte
1. Prepare the Oven and Baking Sheets
Preheat the oven to 180°C / 350°F.
Line several baking sheets with parchment paper.
The traditional Dobos Torte is made with very thin sponge layers, so you can bake the batter in several thin rounds or bake larger sheets and cut them into equal layers.
2. Prepare the Sponge Batter
Separate the eggs carefully.
Place the egg whites in a clean bowl and beat until they begin to foam.
Gradually add about half of the sugar and continue beating until the whites form firm peaks.
In another bowl, beat the egg yolks with the remaining sugar and vanilla until pale and creamy.
Gently fold the yolk mixture into the egg whites.
Sift the flour over the mixture and carefully fold it in.
Don’t overmix, because keeping the batter light and airy helps create delicate sponge layers.
3. Bake the Sponge Layers
Spread the batter into very thin, even layers.
Bake for approximately 5–8 minutes per thin layer, depending on thickness and your oven.
The sponge should be lightly golden and spring back gently when touched.
Allow the layers to cool completely before assembling the cake.
🍫 4. Make the Chocolate Buttercream
Melt the dark chocolate gently and allow it to cool slightly.
In a heatproof bowl, whisk the eggs with the powdered sugar.
Place the bowl over a saucepan of gently simmering water and whisk continuously until the mixture becomes warm and slightly thickened.
Remove from the heat and continue whisking until cooled.
Beat the softened butter until smooth and creamy.
Gradually add the cooled egg mixture.
Add the melted chocolate, cocoa powder, vanilla, and a pinch of salt.
Beat until the buttercream becomes smooth, creamy, and spreadable.
🎂 5. Assemble the Cake
Place one sponge layer on a serving plate.
Spread a thin, even layer of chocolate buttercream over the top.
Add another sponge layer.
Continue alternating:
Sponge → Buttercream → Sponge → Buttercream
until most of the layers have been used.
Cover the top and sides with a thin layer of the remaining buttercream.
Refrigerate the cake while preparing the caramel.
🍯 6. Prepare the Caramel Layer
Place the sugar, water, and lemon juice in a small saucepan.
Heat over medium heat until the sugar melts and turns a deep golden amber color.
Remove from the heat and carefully stir in the butter.
⚠️ Important
Hot caramel can cause serious burns. Handle it carefully and keep children away from the cooking area.
✨ 7. Create the Signature Dobos Top
Traditionally, one of the sponge layers is covered with the hot caramel.
Immediately spread the caramel into a thin layer.
While the caramel is still soft, carefully mark or cut it into serving wedges.
Allow the caramel to cool and harden.
Place the caramel pieces on top of the cake at a slight angle, creating the classic Dobos Torte appearance.
❄️ 8. Chill and Serve
Refrigerate the assembled cake for at least 1–2 hours before serving.
For the best texture, allow it to sit at room temperature for around 15–20 minutes before slicing.
Use a sharp knife to cut clean slices.
⭐ Tips for the Best Dobos Torte
Keep the sponge layers thin
The signature texture of Dobos Torte comes from multiple thin sponge layers rather than a few thick cake layers.
Don’t rush the buttercream
The chocolate and egg mixture should cool before being incorporated into the butter. This helps create a smooth buttercream.
Watch the caramel carefully
Caramel can go from golden to burnt very quickly, so keep a close eye on it.
Make the layers even
Using a template or carefully marking your parchment paper can help produce evenly sized layers.
Chill before slicing
A short chilling period makes the cake easier to cut and helps the layers hold their shape.
🧊 How to Store Dobos Torte
Because the cake contains buttercream and eggs, keep it refrigerated in an airtight cake container.
It is best enjoyed within 3–4 days.
Allow individual slices to sit at room temperature briefly before serving for the best texture.
