Traditional Hungarian Apricot Kolaches (Lekváros Bukta) 🇭🇺🍑

Hungarian Apricot Kolaches, also known as Lekváros Bukta, are soft, fluffy yeast pastries filled with sweet apricot jam. They are a traditional Hungarian homemade treat, often enjoyed with coffee or tea.

Ingredients

For the Dough

  • 500 g all-purpose flour
  • 7 g dry yeast
  • 250 ml lukewarm milk
  • 70 g granulated sugar
  • 2 egg yolks
  • 80 g unsalted butter, melted
  • 1 teaspoon vanilla extract
  • A pinch of salt

For the Filling

  • 200–250 g apricot jam

For the Top

  • 30 g melted butter
  • Powdered sugar, for serving

How to Make Hungarian Apricot Kolaches

1. Prepare the Dough

Mix the lukewarm milk, yeast, and a teaspoon of sugar. Let it stand for about 5–10 minutes.

In a large bowl, combine the flour, remaining sugar, and salt.

Add the egg yolks, melted butter, vanilla, and yeast mixture.

Knead until you have a smooth, soft dough.

Cover and let it rise in a warm place for about 1 hour, or until doubled in size.

2. Shape the Pastries

Transfer the dough to a lightly floured surface and roll it into a rectangle about 1 cm thick.

Cut the dough into equal squares.

Place about 1 tablespoon of apricot jam in the center of each square.

Fold the dough around the filling and pinch the edges firmly to seal.

3. Arrange in the Baking Pan

Place the filled pastries seam-side down in a buttered baking dish, leaving a little space between them.

Brush the tops lightly with melted butter.

Cover and let them rest for another 20–30 minutes.

4. Bake

Preheat the oven to 180°C (350°F).

Bake for approximately 25–30 minutes, or until the tops are lightly golden.

5. Finish and Serve

Allow the pastries to cool slightly.

Dust with powdered sugar and serve warm or at room temperature.

Helpful Tips

  • Use a thick apricot jam so it stays inside the pastry.
  • Do not overfill the dough.
  • Seal the edges well before placing the pastries in the pan.
  • Give the dough enough time to rise for a soft texture.
  • Let the pastries cool slightly before serving.
