Hungarian Kolbász (Sausages) 🇭🇺🌶️

Hungarian Kolbász is a traditional sausage known for its rich paprika flavor, garlic, and savory seasoning. Different regions of Hungary have their own variations, with some versions made fresh and others smoked or cured.

This homemade-style recipe is inspired by the classic flavors of Hungarian sausage and can be served with bread, potatoes, pickles, or a simple salad.

Ingredients

  • 1 kg ground pork
  • 20 g salt
  • 2 tablespoons Hungarian sweet paprika
  • 1 teaspoon hot paprika, optional
  • 4 cloves garlic, finely minced
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground caraway seeds
  • 100 ml cold water
  • Sausage casings, prepared according to package instructions

Instructions

1. Prepare the Mixture

Place the ground pork in a large chilled bowl.

Add the salt, sweet paprika, hot paprika if using, garlic, black pepper, and caraway seeds.

Pour in the cold water and mix thoroughly until all the seasonings are evenly distributed.

Keep the mixture chilled while preparing the casings.

2. Prepare the Casings

Rinse and prepare the sausage casings according to the manufacturer’s instructions.

Fit the casing onto the sausage stuffer, leaving a small amount of casing hanging from the end.

3. Fill the Sausages

Carefully fill the casings with the meat mixture, avoiding excessive pressure so the casing does not split.

Twist the sausage into your preferred lengths.

Check each sausage for large air pockets and gently release them with a clean, sterilized needle if necessary.

4. Chill

Place the finished sausages on a tray and refrigerate for several hours or overnight. This allows the flavors to develop and the sausage to firm up.

5. Cook

For a simple fresh version, cook the sausages thoroughly by grilling, baking, or pan-cooking.

When cooking, make sure the sausage reaches a safe internal temperature of 71°C (160°F) for ground pork.

Serve hot with your favorite Hungarian side dishes.
