How to Make Hungarian Goulash

1. Cook the Onions

Heat the oil or lard in a large heavy pot over medium heat.

Add the chopped onions and cook until soft and lightly golden.

2. Add the Paprika

Remove the pot briefly from the heat and stir in the Hungarian paprika.

Add the garlic and mix well. Avoid burning the paprika, as it can become bitter.

3. Add the Beef

Add the beef cubes and stir until they are well coated with the onion and paprika mixture.

Cook for several minutes.

4. Add the Vegetables and Spices

Add the carrots, parsley root, green pepper, tomato, caraway seeds, and bay leaf.

Cover and simmer for about 1½ hours, or until the beef begins to become tender.

6. Add the Potatoes

Add the cubed potatoes and continue cooking for another 20–25 minutes, until the beef and vegetables are tender.

Add a little extra hot water if needed to maintain a soup-like consistency.

7. Serve

Remove the bay leaf and taste for seasoning.

Serve the goulash hot, garnished with fresh parsley if desired.
