How to Make Nyúlpörkölt

1. Brown the Rabbit

Heat the oil or lard in a large heavy-bottomed pot over medium heat.

Season the rabbit pieces lightly with salt and pepper. Brown them in batches for a few minutes on each side, then remove and set aside.

2. Cook the Onions

Add the chopped onions to the same pot.

Cook for about 5–8 minutes, stirring occasionally, until softened and lightly golden.

3. Add the Paprika

Remove the pot from the heat and stir in the Hungarian paprika.

Add the garlic, tomato, green pepper, and caraway seeds. Stir well.

4. Return the Rabbit

Place the rabbit pieces back into the pot.

Add the bay leaves and enough water or stock to partially cover the meat.

Bring to a gentle simmer.

5. Slow Cook

Cover and cook over low heat for approximately 60–90 minutes, or until the rabbit is tender.

Check occasionally and add a little more liquid if needed. The finished sauce should be rich rather than watery.

6. Finish and Serve

Remove the bay leaves and taste the stew. Adjust the salt and pepper if necessary.

Sprinkle with fresh parsley and serve hot.
