It is commonly served with bread dumplings, pasta, or steamed dumplings and makes a comforting homemade meal.

Ingredients

For the Meat

  • 800 g beef roast or venison
  • 2 tablespoons vegetable oil
  • Salt, to taste
  • Black pepper, to taste
  • 2 bay leaves

For the Sauce

  • 2 carrots, sliced
  • 1 parsley root, sliced
  • 1 small piece of celery root, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon mustard
  • 1 tablespoon sugar
  • 200 g sour cream
  • 1 tablespoon all-purpose flour
  • 500 ml beef stock or water
  • 1 teaspoon vinegar or lemon juice
  • 1 teaspoon Hungarian sweet paprika
  • 4–5 black peppercorns

How to Make Vadas

1. Brown the Meat

Season the meat with salt and black pepper.

Heat the oil in a heavy pot and brown the meat on all sides. Remove it and set aside.

2. Cook the Vegetables

Add the onion, carrots, parsley root, celery root, and garlic to the same pot.

Cook for several minutes until the vegetables begin to soften.

Add the paprika and stir briefly.

3. Simmer the Meat

Return the meat to the pot.

Add the bay leaves and peppercorns, then pour in the stock.

Cover and simmer gently for approximately 1½–2 hours, or until the meat is tender.

4. Prepare the Sauce

Remove the cooked meat from the pot and keep it warm.

Remove the bay leaves and peppercorns.

Blend the cooked vegetables and cooking liquid until smooth.

Return the sauce to the pot and stir in the mustard, sugar, and vinegar or lemon juice.

5. Add the Cream

Mix the sour cream and flour in a bowl until smooth.

Add a little hot sauce to the mixture and stir well.

Gradually add it back to the pot while stirring.

Cook gently for 3–5 minutes, without allowing the sauce to boil vigorously.

6. Serve

Slice the tender meat and spoon the creamy vegetable sauce over the top.

Serve warm with bread dumplings, pasta, or your favorite Hungarian side dish.
